Palmier

I have a date with Palmier today. Thank you Aunty Young for the invites.

These Palmiers are so easy to make. All you need are just 3 simple ingredients (Castor sugar, Puff Pastry & Melted Butter)

I make some minor changes to the recipes. Added minced onion, Italian herbs & Cheddar Cheese and brushed with egg wash. Overall taste was good and taste a bit like English version Roti Prata.

Blueberry Cheese Cake

Did this Blueberry Cheese Cake for a pot luck dinner last night and to suprise the birthday gal too. It was a rush bake as I had to go back office for stock taking. Luckily I managed to bake this on time for the party and am very satisified with the taste too.

Instead of using Rasphberry, I am using Blueberry instead for this bake. For the topping, I decorate it with Strawberries and Blueberries.

Pandan Coffee Chiffon Cake

I love Pandan Chiffon & Coffee, so decide to combine these 2 ingredients and bake a Pandan Coffee Chiffon Cake.

Ingredients:

110g Cake Flour
5 Eggs (55g)
60ml Fresh Coconut Milk
60g Oil ( I used Corn Oil)
1/4 tsp baking powder
10 Pandan Leaves
5 tbsp water
120g Castor Sugar
1/2 tsp vanilla extract

Methods:

Preheat oven to 150 degress Celsius.
Blend the pandan leaves with the water and squeeze out the juice.
Sift the baking powder and the cake flour.
Add 2 tbsp of the pandan juice to the coconut milk.
Whisk the egg yolks with 1/2 of the sugar till light and fluffy.
Add the coconut milk and mix well followed by the flour mixture.
Add the oil and vanilla extract.
Whisk the egg white with the balance 1/2 of the sugar.
Add the egg yolk mixture till well mixed.
Pour half of the mixture to another bowl and mixed with 2 tbsp of coffee.
Pour to the muffin cup, half of each mixture till 3/4 full.
Baked at 150 degrees for 45 mins or till golden brown.
Set aside to cool.

Fudge Nutty Cranberries Brownies

I have a date with Fion & Aunty Young for this post together theme. It was a last minute bake as I was very tied up with my work. As I have promised Fion I will support this theme, no matter how busy I am, I still have to give them my support. This is one of my favourite desserts and I love to have it with vanilla ice cream. This may sounds fattening but once a while indulge in this should be fine.
